Recently, I shared that I am a bit burnt out on being super duper creative with meals so I have been sticking to a weekly meal plan that works well for us. Today, I want to share a couple recipes that fit very nicely into that weekly plan (or any plan! or NO plan!). The first is a TACO CASSEROLE that is super yummy and highly changeable, low stress, great on taco night OR pasta night! The second is PAD THAI, which is something my kids enjoy making often these days and, again, can fit into the schedule on pasta night or whenever you want.
